Colorful Yogurt Bark

Fatty fish, leafy greens, nuts, whole grains, vegetables, and FRUITS 🥭 🥝 🍓🫐 🍍are some of the best foods for boosting the mind.
Don't let this month pass you by without eating a piece of fruit.
If you're too scared to eat fruit (because you think it contains too much sugar), try combining it with a healthy fat (ex: yogurt) for better blood sugar balance.
This ‘Colorful Yogurt Bark’ is one of the 12 recipes featured in my cookbook, Eat The Rainbow!
Ingredients:
2 cups of plain yogurt
1/2 cup of strawberries
1/2 cup of blueberries
1/2 cup of raspberries
1/2 cup of blackberries
1/4 cup of pineapple
1/2 of mango
1 whole kiwi
Optional: cinnamon + maple syrup
Directions:
▫️Cut fruits into smaller pieces and chunks to your liking.
▫️Line a sheet pan with parchment paper. ▫️Whisk yogurt in a bowl with cinnamon and maple syrup until thoroughly combined.
▫️Transfer yogurt mixture to a sheet pan and spread it around to an even thickness (the thicker it’s spread, the thicker your yogurt bark will be).
▫️Sprinkle chopped fruit on top of the yogurt mixture.
▫️Place in the freezer for at least 3 hours to set, until the yogurt is firm.
▫️Cut into smaller pieces and enjoy! Store leftovers in the freezer.
